Image Manager Extended shows a grey field for dimensions with defined width and height in pixels. But in the sourcecode of the website there is no explicite width and height shown. Google Pagespeed Insights recommends to set this data in sourcecode. How can this be done?

If the dimensions are not changed from the original, then they are not added to the img tag. This was the default until a few releases ago, but has since changed.
You may need to set the Always Include Dimensions option to Yes in Editor Profiles -> Plugin Parameters -> Image Manager Extended.
