Hi,
I'm using JCE Pro and I'd like to structure one of my articles into an accordion like this. How can I do this? In the toolbar under Styles, I find a huge list with dropdown and accordion classes. But where can I find the documentation how to handle them?

The accordian styles you are seeing the Styles list are extracted from your template's stylesheets, in this case part of the Bootstrap CSS Framewoek your template uses.

In order to use them to create an accordian, you would have to add HTML markup to apply those css styles to. Here is an example - https://getbootstrap.com/2.3.2/javascript.html#collapse

It might be easier to use a dedicated extension for this, such as RegularLabs Sliders - https://www.regularlabs.com/extensions/sliders
